French Oak casks have been delivered from a french winery. These are waiting to be placed into position at the brewery before brewing commences as this ale will need to age in the casks for between 18 months and 2 years.
While the ale is aging, raspberries will be added to one cask and sour cherries to the other to emulate the true belgian lambick style fruit ales.With the wild yeasts fruits and french oak we expect the flavours to be complex and deep.
