About Our Brewing Process
- Stage one; Mashing
The Malted Barley is mixed with hot water at approx 80c in the Mash Tun. When mixed the temp will be at 66c and left in the Mash Tun for 60 mins.
The clear wort is then pumped from the Mash Tun to the copper with the remaining sugars washed from the mash by sparging with hot water(70c).
- Stage two; Boiling
The wort is then boiled up in the Copper for one hour. At this stage hops are added at different stages throughout the boil.
- Stage three; Cooling
Once the boiling has finished the wort is transfered through a heat exchanger and the temp is brought down to approx 20c and put into a fermenter, where it is airiated and then yeast is added.
- Stage four; Fermentation
The beer is fermented with yeast until the gravity reaches two degrees above final gravity . The coolers are then turned on to bring the temp down to halt fermentation.
- Stage five; Casking and Bottling
The final beer is then casked and bottled and left for a short while to mature or until it is ready for sale.
